Did you know if mushrooms are exposed to UV light while they're growing it activates the production of Vitamin D in their tissues? Vitamin D that you can then ingest and absorb in your own tissues? In fact, mushrooms are the only fruit or vegetable that can produce a significant source of Vitamin D. But they can only produce the D if exposed to UV light and - oh the irony! - mushrooms mostly grow in the dark.

However, if you love mushrooms and want mushrooms' D - and many of us are D-ficient, and need that D from somewhere - you can look for mushrooms that have been specially treated with UV light while growing. Just check the nutrition label on your crated 'shrooms. If you can score some with D, you'll find just one serving, about 2/3 cup of sliced mushrooms, has around 50% of all the D you need in a day.
