UMAi Dry won an award from the National Restaurant Association for its ability to turn out steak dry-aged in an ordinary refrigerator. Originally developed for commercial kitchens, UMAi's dry-aging starter kit is now available to one and all seeking to tenderize and intensify the flavor of their meat at a fraction of the cost.

UMAi seals whole subprimal cuts of beef within a breathable membrane that allows moisture and oxygen to transfer when the package is set for aging in a fridge. Despite the membrane bag's ventilating properties, UMAi says it generates no mess (100% seal) and imparts no odors. The starter kit includes a Vacuum Sealer, an assortment of bags for typical cuts of boneless ribeye, NY strip, plus smaller roast bags, and additional vacuum storage bags for preserving steaks in the fridge or freezer once the again process is complete. Dry-aging instructions are included as well.
